Zucchini Pancakes
1 1/2 cups shredded zucchini
1/2 cup flour
1/2 tsp baking powder
2 eggs
2 Tbsp grated onion
pinch salt
Delicious additions: grated swiss & gruyere, parsley, garlic, potatoes.
Heat half olive oil, half butter on griddle. Mix ingredients together. Form pancakes on griddle & cook on each side. We enjoy ours with applesauce.
Zucchini Chocolate Muffins
(from Mad About Muffins - Dot Vartan)
1 1/2 cups shredded zucchini
1/2 tsp salt
2 cups flour
1 tsp baking soda
1 Tbsp baking powder
2 tsp cinnamon
1/2 tsp ground cloves
1/4 cup cocoa
1 cup chocolate chips
1/3 cup vegetable oil
2 tsp vanilla
3 eggs, beaten
1 cup sugar
1/2 cup buttermilk
Heat oven to 375 degrees. Sprinkle salt over zucchini & set aside. In large bowl, sift together flour, baking soda, baking powder, cinnamon, cloves, and cocoa. In medium bowl, mix together oil, vanilla, eggs, sugar and buttermilk. Add buttermilk mixture to flour mixture and mix well. Stir in zucchini and chocolate chips. Pour into muffin tins. Bake for 20 minutes. Makes 18 muffins.
